Vegan Overnight Thai Iced Coffee. A super simple THAI iced coffee that’s healthy and packed with flavor! This vegan iced coffee version is perfect to make ahead and enjoy the next morning. A tasty lower sugar alternative homemade iced coffee you can drink without guilt!
Here’s a confession… I’ve only ordered Iced coffee maybe once in my life. It was a specialty Iced coffee, Thai Iced coffee to be exact. You see, I am a bit spoiled. My father in law used to own a coffee farm in Hawaii. Hot coffee, freshly roasted then brewed was how we ALWAYS drank it. Iced coffee only diluted the flavors. Yes, I know, total coffee and espresso snob here. Okay hear me out now. Another reason I don’t order ice coffee much is because I don’t like ice in my drinks, unless it’s blended like a smoothie. .
Are you shaking your head with disbelief yet? Haha. Well don’t worry, this is all about to change.
I figured out a way, a way for me (us) to really ENJOY iced coffee at home. Without it being too cold or diluted. I was on a mission to “revamp” that Thai iced coffee drink.
Original Thai Iced Coffee is made with amazing spice blends, espresso, and some form of cream or condensed sugar. The spices are what really make this coffee stand out. Cardamom and cinnamon to name a phew. And the aroma alone just calms me, even though it’s a caffeine drink. Best of both worlds, right?
But here’s the thing, the REAL Thai Iced Coffee drink recipe is delicious but WHOA NELLY is it packed with sugar and some extra unnecessary “fluff” per se.
DO you see where I’m going with this? Yep, recipe REMAKE time ya’ll! The dairy free lower sugar kind.
Instead of using heavy cream or condensed milk, I am using Caramel Almond Cashew Nutchello! Oh my heavens this Silk nut drink is delicious.
Made with rich caramel flavor, toasted almonds, and creamy cashews. It’s Non-GMO, only 9 grams of sugar (real sugar) per glass, and free of dairy, soy, lactose, gluten, casein and carrageenan. Did I mention it’s super creamy? Cause it is! And it’s going to be the BASE for our Vegan Thai Iced Coffee.
Okay, let me explain the process a little more. So in order to really get the SPICE in this Thai Spiced Iced coffee, you want to let it sit overnight. That being said, we must first “layer” the flavors together, if that makes sense?
First you brew your espresso in a french press. The dark roast the better.
Then you place your milk, or in this case, your Caramel Almond Cashew Nutchello, in glass container.
Add in a pinch more of coconut sugar, spices (cinnamon, nutmeg, and Cardamom), almond or vanilla extract (if you want more flavor), a touch of coconut cream or even vegan dulce de leche sauce (optional but amazing!), and then your dark brewed coffee/espresso.
Once that’s all mixed, you let it sit in fridge overnight. Yes, do it! The longer it sits the more SPICE and FLAVOR is formed. Trust me on this!
Then the next morning, add a few ice cubes, not a ton, and pour in to a nice tall glass! Sip, savor, and ENJOY!

Ingredients
- 4 tbsp ground dark Espresso
- 12-14oz purified hot water
- 4oz Almond/Cashew Milk (Silk Caramel almond Nutchello)
- 1 tsp ground cardamon
- 1 tsp cinnamon
- 1/4 tsp nutmeg (optional)
- 2 tbsp coconut sugar or raw sugar
- 1 tbsp coconut cream
- 1/2 tsp Vanilla or almond extract
- Optional stir in (vegan dulce de leche sauce)
Instructions
- First brew your coffee in a french press. Add your ground coffee/espresso to your french press, then add your hot water, then press down and let it sit for 5 minutes.
- While coffee is brewing, mx your milk and spices. Place your almond/cashew milk in a large canister or glass container.
- Mix in your sugar, spices, extracts, and any additional coconut cream you'd like.
- Now pour your french press coffee on top of that mix.
- Stir and let it sit overnight in fridge.
- Pour into cups with ice the next morning and enjoy!
Notes
For nutchello, I used the Caramel Almond Cashew flavor. Silk Cashew or almond milk will work too! Feel free to add in my vegan dulce de leche sauce for more caramel flavor.
You can enjoy this recipe right away but letting it sit overnight really brings out the thai spices! So good!
If you get impatient and don’t want to wait overnight, that’s totally understandable and it’s still delicious. But just think, you can wake up and have coffee ready to go if you do!
